Birthday Berry Cobbler

T celebrated a birthday last weekend.

Because I left my glamorous and high paying job behind when I had kids, (excuse me for a minute while I go laugh at that portion of this sentence) I didn't have any extra moolah, so I decided to make T his favorite dessert as a birthday gift.


I didn't have a good Blackberry recipe on hand, but my friend Angela sent one my way via email and told me I could share it with you.


Mixed Berry Cobbler
Ingredients:
**I just used two bags (about 4 cups) of frozen blackberries in place of the other berries listed**

  • 1 cup fresh or frozen raspberries
  • 1 cup fresh or frozen blueberries
  • 2 cups fresh or frozen strawberries (other berries may be substituted)
  • 1.5 cups sugar; divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter or margarine
 Instructions:

  • Make ahead:  Combine berries in a bowl and sweeten with 1/2 cup of sugar. Refrigerate, covered, for a few hours. Drain before spooning over batter
  • Preheat oven to 375 degrees. Combine flour, remaining sugar, baking powder, and salt in a medium bowl; mix well. Add milk; beat until smooth, about 2 minutes.
  • Place butter in a medium baking dish. Place dish in oven to melt butter; remove from oven. Spoon batter evenly over melted butter.
  • Spoon berries over batter; do not stir. Bake for 20 minutes or until golden brown. Serve cobbler warm or room temperature.
I didn't do a good job of draining my blackberries before adding them to the batter, and it really made a difference. I had to cook the cobbler for longer than I should have, and it was still a little soupy. I've tasted Angela's masterpiece before, and it really is a great recipe!

    Did T really turn 31? Oh, gosh, I am old. Oh, well. At least I have young friends!!

  3. Yum--that looks good! Aldi has frozen blackberry/blueberry/raspberry mix, and I've used that to make a berry crisp. I consider it kind of a "healthy" dessert. ;)

  8. Yum that looks good! My hubby would love this! His b-day was Sunday, but he's really easy. He always just wants carvel ice cream cake. I know what you mean about not having moolah for presents. I got my hubby a few things, but it always feels a little weird giving him gifts I know were purchased with his money- well, I know it's "our" money, but it was earned solely by him. I wound up getting him practical stuff. I'm a little embarassed to admit the poor guy got new boxers for his birthday!

  9. Looks YUMMY! I make one similar but use 1 cup of self rising flour and 1 cup of milk for the 'dough'. I pour the milk in a blender then the flour. Blend. SO much easier and then just pour over the butter. I use the SAME 'dough' mix for my Chicken pot pie and it's delish! Recipe for the Easy pot pie is on my blog. My real chef partner raves over it. And it's REALLY simple.

    If I made that at my house, I probably would be the only one to eat it as I am the only cobbler lover. However, I'll keep your recipe in mind to make for a potluck or something because I have blueberries in my freezer that I could use for the berry portion. :)
