Easy Spinach Artichoke Dip

Today I'm giving you one of my go-to appetizer recipes for girls' nights, couples' get-togethers, game days, you name it. Spinach Artichoke Dip! Pretty much everyone except T likes it, and that's only because it features cheese in a starring role. T's slightly freakish aversion to all things cheese (save for pizza and Cheez-its, oddly enough) is what keeps me from making this more often. But I had the opportunity last weekend, and I took it!

Ingredients:



1 (14 oz.) can artichoke hearts, chopped and drained
1/2 (10 oz) package of frozen chopped spinach, thawed (I used the whole package)
1/2 cup sour cream
1/4 cup mayo
1/4 cup cream cheese
1/4 cup grated romano (I just used packages of Italian cheese, and I used a lot more cheese)
1 teaspoon minced garlic

Instructions:

Preheat oven to 375 degrees F. In a small baking dish, mix ingredients. Cover and bake until heated through and bubbly. (About 25 to 30 minutes). I add a bit of lemon juice before serving with pita chips, bagel chips, or crusty bread.

This looks delicious! I make a similar spinach-artichoke dip, but I make it in the crock pot. It's always a hit...like yours.

Mmmm. . . this looks scrumptious! Maybe T doesn't like cheese because God used an extra portion of cheese-love when he made me. Honestly, I think I could be a vegetarian as long as I could have cheese in place of meat. There's scarcely a cheese or cheese product I don't like--it's ridiculous. :)

I'm betting this dip is a big hit at parties!

I've tried to make this dip at home before because we love it at restaurants, but the artichokes always end up completely overpowering the dish wit a wonky flavor. Maybe I just didn't throw in enough cheese. :)

YUM!! I have a spinach artichoke recipe that's pretty similar to this one, I think. It's so good!! And people are always so impressed that it's homemade. I've only had it with chips so far, not crusty bread. That would be even better.

I love love love a good hardy dip.

I was wondering if you had any suggestions as to what I could use instead of the mayo or should I just leave it out? We have an egg allergy in the house.

So nice to meet you Amanda! My grandmother's name was Amanda, so I named one of my daughters Amanda!

I could literally eat the whole dish! This is one of my favorite dishes and I love the addition of sour cream to make it so creamy. I have never tried the Romano cheese before. We will have to try this. Such a great company treat.

I made pretty much this exact recipe for a superbowl party- YUM! I also found that whipped cream cheese is much easier to get to mix with the other ingredients. :-)

Oh yummy yummy. I love appetizers for dinner. Especially ones like this :-) If you like onions, you should try the Best Baked Vidalia Onion dip here. Another favorite. BTW your blog is no longer good for me if you keep posting yummy recipes. Can't you see I have enough trouble on my own ... making Monkey Bread and all ;-)

This is very similar to my recipe. YUM! How can you go wrong with cheese and mayo? I'm not sure if mine has sour cream though. Hmmm. Might have to try that addition. YUM! Thanks for sharing!

I have never made anything with artichokes, so this recipe was always intimidating to me. Now that I have seen some pics, I think I will try it. I love spinach/artichoke dip...yum!

Your pictures are gorgeous! We had spinach-artichoke dip for the Super Bowl too, but I used frozen hearts instead of canned. They're a great thing to have on hand.
