House of Pancakes

It was one of those nights last night. 


When it came time to plan dinner, I had nuthin' left. In a last ditch attempt to get the girls to clean up the destruction in the Addition, I promised them pancakes. This seemed to speed the process up substantially, and even Michaela Byrd paused from her gleefully frantic efforts to empty the dress-up box of all 457 plastic necklaces to help her big sister clean. 


They aren't beautiful, but they sure taste good. No Bisquick required! 


Here's my favorite EASY recipe (I double it):


Pancakes
from Better Homes & Gardens New Cook Book


Ingredients:
1 cup all-purpose flour
1 T sugar
2 t baking powder
1/4 t salt
1 beaten egg
1 cup milk
2 T cooking oil


In a medium bowl, stir together flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture and set aside. In another medium mixing bowl, combine eggs, milk, and cooking oil. Add egg mixture all at once to the dry mixture and stir until moistened. Batter will be lumpy. Cook over medium heat about 2 minutes on each side or until pancakes are golden brown.


I served mine with fresh strawberries last night. Even Natalie agreed that it was worth the drudgery of picking up all of her toys. Maybe we should have pancakes every day.

Oh, boy, do those pancakes look good! And I would disagree with you--I'd say they are beautiful!

I'm right there with you. . . breakfast for supper is a great fall-back meal. And to tell the truth, it's one of my favorites. I rarely eat "breakfast food" for breakfast, but at suppertime--yum!

Mmm, pancakes!
When I'm in that predicament, sometimes (like last night) I just scramble up some eggs. Even though I don't like eggs and don't really eat them.
My other fall-back is taco meat. Brown up some ground beef with taco seasoning and you can have taco salad, nachos, burritos, quesadillas (we rarely have just tacos, though!).

Yummmmmm....those look so good! And why not use pancakes for motivation to clean.....sure works for me! ;D

My fall back meal is also breakfast. I scramble some eggs and make some biscuits and call it good!

Oh, yes! breakfast is super easy!! We also do loaded baked potatoes or tomato soup and grilled cheese. :D

For the kiddos...chicken nuggets and whatever's on hand! I swear those bags of frozen nuggets have saved me more than once!

I too enjoy the occasional breakfast meal for supper. Pancakes are definately one of them. Yours look delish. I will try that recipe for sure.

we do breakfast for dinner every saturday night! sometimes it's pancakes, sometimes biscuits, sometimes it's more elaborate... always a favorite!

honestly, my fallback is peanut butter sandwiches. not a warm, comforting meal, but it's something my whole family loves & it's delicious with a glass of milk & a banana! : )

Breakfast for dinner is usually my fallback idea. We all love it and it seems like a treat since it isn't often that we have a big breakfast in the mornings. Pancakes or belgian waffles with either bacon or sausage is the top vote-getter around here.

I normally do pancakes or grilled cheese if I'm in that predicament. That's the recipe I use for pancakes as well. YUM!

Oh, but they DO look beautiful! Especially with the strawberries and syrup... yummmm.

I'll have to give this recipe a shot. Hubby's not too fond of the Bisquick-variety pancakes.

I don't think to do breakfast for supper, but as a kid, I loved it when my mom did that. It was a special treat when my dad was out of town. Your pancakes look really tasty!

I'm definitely going to try this recipe...my kids love pancakes, I don't. So I'm a pancake mix kind of mom, but I always love to try something from scratch to make me feel like a better mom!

Breakfast for dinner is our fall back too! Usually crepes, sometimes eggs. And sometimes not a fall back at all!

they too are beautiful! We had waffles last night as well. :) My fall back is usually chicken stir fry because we usually always have rice, chicken, and some sort of veggies or chicken, pasta, and broc with some EVOO and garlic! Yum!
