Easy Chicken Enchiladas

I guess that pretty much all of the recipes I share here could have "easy" or "simple" in the title, but I'm just in that stage of life where easy and simple makes it easier to get done. I've had fun updating some of the older blog recipes with new photos and updated notes...so I thought I'd share one for Easy Chicken Enchiladas today.

My friend Kim submitted it to our MOPS cookbook, and it is one I love to share when we have family over! I like that I can limit the cheese on one side for picky picky T, and load it up on the other side for us regular folks. {wink}

Easy Chicken Enchiladas

Here's what you'll need to get started:

  • 1 can cream of chicken soup (Use 2 cans for thicker enchiladas)
  • 1/2 c. sour cream (I used Fat Free)
  • 1 T. butter
  • 1 medium onion, chopped (I always forget the onions, so I used minced onions from the pantry)
  • 1 t. chili powder
  • 2 c. chicken, cooked and chopped
  • 1 can (4 oz) chopped green chilies, drained
  • 1 can diced tomatoes, Mexican style (this is my addition)
  • 8 flour tortillas
  • 1 c. shredded cheddar cheese

Preheat oven to 350 degrees F.

1. In a small bowl, mix the soup and sour cream; set aside.
2. Melt butter in a saucepan over medium heat; add onion and chili powder sauce and sauté until tender.
3. Stir in chicken, chili peppers, half of the tomatoes, and 2 T. of soup mixture and stir until heated through (I added more soup mixture to thicken it up a bit)
4. Spread 1/2 c. of the soup mixture on the bottom of a 9 x 13 inch baking dish.

5. Spoon 1/4 cup of chicken mixture on each tortilla.
6. Roll tortillas and place seam-side down in the baking dish.
7. Cover with remaining soup mixture and tomatoes, and sprinkle with cheese.
8. Bake for 25 minutes or until bubbly and lightly browned.

Even T, who has the refined palate of a two year old, asked for seconds. We served them with Mexican rice and took order for refried beans, since not everyone was a fan.

The verdict on our meal? Excellente!

  1. Wait? Some people in your family don't like refried beans? And mucho cheese? Crazy!

But this looks really yummy. I've never really found a good at-home enchilada, but this just may fit the bill.

  2. I knew as soon as I saw the first picture that you had to leave some plain for your picky eaters:) I have to do the same thing at my house! I've made a similar recipe before, but my boys weren't big fans because of the sauce...especially Henry who thinks he doesn't like cheese {even though he love pizza}.

  3. "Easy" is always a magic word around here when it comes to cooking! These look yummy!

  4. Looks delicious! I love new Enchilada recipes. I make them all the time.

I wanted to let you know about a giveaway I'm hosting on my blog (and they're rare for me): SEVENTY FIVE FREE Shutterfly Christmas cards are being given away here: http://happilyalawmama.blogspot.com/.

  5. This looks great. Wonderful directions with great pics!

  6. Looks really good and easy. Our daughter didn't like cheese either when she was younger. She use to even take it off of pizza! But I'm happy to report she's outgrown her pickiness! Enjoy your day!

  7. Those look soo good, Amanda! I love anything close to Mexican. I'll have to give them a try. =) Tonight I'm attempting to make a creamy chicken and rice soup. No recipe, I'm just gonna wing-it. Hope it turns out ok. If it does it'll become my newest post. Fingers crossed!!

    Hope you're having a good day. : )

  10. That's very similar to a recipe I use and LOVE. But, I've never added tomatoes on top. I'll have to try that next time.

P.S. I'm all about th easy recipes too. I don't have tme for anything else these days.

  11. Yummo! This looks so tasty! I think I'm going to pin it to my pinterest to try for later:) Who doesn't love chicken enchiladas?

  12. I haven't made chicen enchiladas in a long time. I like an easy recipe like this one and I also like to substitute in fat-free sour cream and soups when it will work in a recipe. I've been looking through some of my old blog recipes for inspiration. It's hard to think of different things to cook week after week.

  13. This looks really delicious. I am glad to found your blog. I will be trying this recipe soon. Thanks for sharing!
