Soft Ginger Cookies (Dessert Recipe)

Today's recipe was a hit with my picky eater husband, so I'm hoping it will be a hit with you too. The recipe for Soft Ginger Cookies that I originally Pinned on my Pinterest boards would have cost over $16, just for the crystalized ginger. That sounded a bit too pricey for me for homemade dessert, so I started hunting for a more affordable recipe. I found one, and I'm sharing it with you today!

Soft Ginger Cookies
adapted from allrecipes.com

Ingredients:
2 1/4 cups all-purpose flour
2 tsp. ground ginger
3/4 tsp. ground cinnamon (I always add a dash more)
1 tsp. baking soda
1/2 tsp. ground cloves
1/4 tsp. salt
3/4 cup margarine, softened (I usually go with butter, but used margarine since the recipe called for it)
1 cup white sugar
1 egg
1 T orange juice
1/4 cup molasses
2 T. white sugar

Directions:
1. Preheat your oven to 350 degrees F. Stir together the flour, cinnamon, ginger, cloves, baking soda, and salt in a large bowl. Set aside.

2. Add margarine and sugar to a mixer (or large bowl) and cream until light and fluffy. Beat the egg in; then add the orange juice and the molasses. (Tip for molasses: spray the inside of the measuring cup with nonstick cooking spray so it's easier to get out)

3. Gradually add the dry ingredients to the mixer and stir. Place the dough in the freezer for 10 to 15 minutes to set (otherwise they are impossible to shape!)

4. Place the 2T of sugar in a small bowl. Roll dough into small balls. Roll each ball in the 2 T of sugar and place on an ungreased cookie sheet. Flatten slightly with a fork.

5. Bake the cookies for 8 to 10 minutes, and then allow them to sit on the pan for 5 minutes before transferring to a wire rack to cool.

We devoured these in a couple of days! Let me know if you try this recipe out.

"You Are Beautiful" Stenciled Message Mirror (with Martha Stewart Crafts Glass Paint)

Last month, I shared a little haul video featuring some crafty tools I received from the new Martha Stewart Glass Paint line from Plaid. I've been playing with paint and stencils, and today I'm going to show you how I made a Stenciled Message Mirror for my daughters. More on why I made this project and used this message another day. Today's all about crafty fun!

I started out with a plain mirror from WalMart that cost a little less than $5, and I ended up with something cute that I can display in my girls' room. Here's a quick before and after shot:

You don't need a bunch of supplies to make this project, and it was so simple and fun to put together!
Supplies for Glass Painting, from Serenity Now blog

-Mirror (any size is fine)
from the Martha Stewart Glass Paint line:
-Frost Translucent Glass Paint Set
-Adhesive stencils
-Adhesive silkscreen
-Squeegee
-Sponge pouncer
optional items:
-Paper plate to hold paint
-Spray paint
-Fabric for flower
-Hot Glue and scissors for flower

Instructions:

If you're going to choose a new color for the frame:

1. Carefully tape off and cover the mirror completely. I used painter's tape for the edges and newspaper for the center.

2. Give your frame a coat or two of your favorite shade of spray paint. I chose a pretty blue.

3. Allow frame to dry completely and remove tape/paper. Clean your mirror with glass cleaner, allow it to dry, and then clean again with some rubbing alcohol to prep your surface.

When it came to working with my stencils and silkscreen, I chose to work from the bottom up.

4. Remove the backing from the silkscreen and place at the bottom of the mirror. I lined the edge up with the frame to minimize paint leaking onto the mirror.

5. Peel each letter stencil off individually.

6. The adhesive is pretty sticky, so I flipped the letters over backwards to align them the way I wanted.

7. Turn the letters over and press each one down firmly to adhere to the mirror. You don't want paint leaking underneath!

8. Add your second (top) line of letters. I used a different font for this one to make it easier on myself. You'll notice a letter missing on the middle line because I only had one "u." I did the second "u" after I painted the first.

9. Squirt some paint onto a paper plate and grab a sponge dauber.

10. Using quick up and down motions, "daub" the paint onto your letter stencils. Less is more! If you use too much paint, you run the risk of leaking paint or splatters. I did one coat and then quickly did another while it was still wet.

11. Carefully peel the stencils up while the paint is still wet.

You'll have a nice frosted effect:

The silkscreens work a bit differently, but are just as easy to use!

As pictured above, you apply a line of paint (so awesome that each paint comes with a precision tip!) just above the area to be painted. Then you use the squeegee to swipe the paint down into the grooves of the silkscreen. Tip: be sure you look to see that the paint makes it into all the crevices!

All done with the stenciling...that was easy!

I chose to dress my mirror up by making a quick layered fabric rosette from leftover window treatment fabric:

Someone liked it so much she wanted to sit down right away and brush her hair....

Accessorizing an IKEA Expedit?

They say adding texture to a room is always a must when you're decorating, but I wonder if fur is really the way I should go when I start adding stuff to my new thrift store score Expedit.

Yeah, Emma wasn't convinced either.

What do you accessorize shelves with?

Review of Summer Reading List, 2012

Want to see what I thought of the books on my 2012 Summer Reading List? Since Summer is officially over in my head, I wanted to give you guys the dirt. I tend to read quite a bit more over the summer than I do during the rest of the year. Sunny afternoons on the beach and at the pool allow for page turning, and we seem to be in less of a hurry to go and do.

And, if I'm being completely honest, there is absolutely nothing to watch on TV. No Downton Abbey, no Modern Family, no Grey's Anatomy. I've been reduced to watching a bunch of skanky adults with 3 collective brain cells battle it out for money on Bachelor Pad. And you wonder why I've read 347 books this summer?

These are some of the books I read over the summer months:

1. Is Everyone Hanging Out Without Me? Mindy Kaling

Though it didn't strike my funny bone the way Tina Fey's Bossypants did, Kaling is witty and engaging. She drew me right in and made me feel like she was just telling me her story over a mocha at the local coffee shop.

2. Spring Fever Mary Kay Andrews

Bravo! Mary Kay Andrews is one of my very favorite authors. I liked this one more than Summer Rental, though I spent most of the book with mixed feelings about Mason (as I suspect the writer wanted me to). As always, she writes fun, likeable characters...and at least one villain you love to hate!

3. Game of Thrones George R.R. Martin
This came as a complete surprise to me, but I loved this novel so much I read all four of the other books in the series (to date) in a few weeks. And that's saying a lot, because although I am a fast reader, the novels seemed to average between 700 to 900 pages each. But Martin's storytelling drew me in so quickly, I found myself staying up until 1 in the morning to read more.

I mentioned before that I tend to stick pretty much with chick lit. I like books with pink covers about girls who buy cute shoes and marry hot guys with lots of money. This series was the complete opposite of that. Think of it as HBO's The Sopranos, but in a setting like The Hobbit. I'm not into wizards and dirty people and magic and all that jazz. I heard a lot of hype about the HBO series based on these books, so I wanted to check them out. It was an excellent reminder of what good storytelling should be.

4. Hot Six Janet Evanovich

Thanks to our library, I managed to read books six through twelve, but I couldn't tell you any of the plots at this point. I like Evanovich's sense of humor, and they're fun fluffy reads for an afternoon at the pool, but the stories all run together. Very predictable. I keep reading to see if Stephanie ever decides to marry Joe Morelli. (please no spoilers)

5. Blue Bistro Elin Hildebrand

Pretty vanilla for me. At most, it made me hungry because Hildebrand mentions a lot of the dishes served at the Blue Bistro. The main character really just made me cranky because of her poor choices.

6. Mennonite in a Little Black Dress Rhoda Janzen
Not life-changing, but a decent read. I'm not normally a fan of memoir, but Janzen gives us a humorous peek at Mennonite life (and food). Bummed that I'll have to miss discussion for this in the next book club.

7. God, Girlfriends, and Getaways Mary R. Snyder
Some ladies from my MOPS group read this as a summer book/Bible study. We learned and shared some interesting things about friendships with this one.

8. Firefly Lane Kristin Hannah
This was the first pick for my book club, and I really enjoyed it until the last 100 pages, which were a real Debbie Downer.

As in, your husband comes home from work and finds you clutching the book in tears.

"What's wrong?" he asks.

You babble something incoherently about someone dying.

He takes the book and skims the back cover. "Was it the hot chick or the ugly chick who dies?" he demands.

"Theeeee..uuuuugly....oooone!" you wail.

He rolls his eyes and heads to the kitchen to eat a sandwich and plug his ears so he can't hear you sobbing.

The end.

9. Books the girls and I listened to on tape:

Henry and Beezus Beverly Clearly
Little House in the Big Woods, Little House on the Prairie, On the Banks of Plum Creek, By the Shores of Silver Lake, The Long Winter Laura Ingalls Wilder
Willy Wonka and the Chocolate Factory Roald Dahl
Matilda Roald Dahl

I try to stick with classics for books on tape with the kids. They loved each and every one. Even Michaela Byrd, the 4 year old, paid attention for 98% of the time and could answer questions about the story if I asked.

So, a nice Summer for us as far as "literature" was concerned. With the exception of Mary Kay Andrews' book, everything else was from the library. With money tight, I don't spend much on books for myself anymore, unless it is something I am dying to read right away. And the girls love hopping through the kids' section of the library, choosing storybooks to bring home.

I'm working on a Fall Reading List right now!

What did you enjoy reading this Summer? What's on your Fall reading list?
