Chicken Burritos (Chipotle Inspired Weeknight Meal)

We love Chipotle, but eating out can get expensive, and isn't necessarily always the healthiest option. I did a little Googling to find a yummy Chipotle knock-off rice dish, and doctored up my own burrito recipe for those nights when we want a tasty Mexican-ish meal, but don't want to eat out. This recipe for Chipotle Inspired Burritos is a tasty one dish meal!

Ingredients:
Chipotle Inspired Burrito Recipe, at Serenity Now

-Chicken breasts (fresh or frozen)
-1 cup white rice (enough to serve your family)
-1 to 2 T cilantro (or substitute parseley)
-Salt
-1 can of diced tomatoes with green chilies
-1 can of corn
-1 can of black beans
-Taco seasoning
-Flour tortillas
-Chili powder (optional)
- 1 to 2 T lime juice (fresh or bottled)
-Pepper
-Cheddar and/or mozzarella cheese
-Lettuce
-Salsa (optional)

-Step by Step-

To make the rice:
Cook rice according to package directions. Set aside. Add 1 to 2 tablespoons of lime juice and 1 to 2 tablespoons of cilantro (or parseley) and mix well.

For the black beans:
Cook beans in a small saucepan according to directions. Add a dash of chili powder if desired. 

For the corn and tomato mixture:
Mix the corn and tomatoes in a small sauce pan and cook until heated through. Add a dash of pepper. 

For the chicken:
Thaw frozen chicken breasts if necessary. Coat with a small amount of taco seasoning and grill. (I use my George Foreman grill in the winter or rainy weather)

To make your burrito:
Layer the cooked chicken, rice, corn and tomatoes, and black beans on top of an open (warm) tortilla. Top with lettuce, cheeses, and salsa (if desired). Roll your burrito up and enjoy!

It looks like a lot of steps, but it really is simple. A very, very filling meal!
