Red Pepper Chipotle Lime Sauce

I am excited to bring you a double recipe today! The first half is here on my blog, and Kelli from Random Thoughts of a SUPERMOM is hosting my "companion" recipe on her blog. Stick around and I'll show you how recently I made a Red Pepper Chipotle Lime Sauce!

Something I mentioned at Kelli's is that I am looking for ways to eat healthier...for me. I do a great job of bribing forcing encouraging my girls to eat fruits, vegetables, grains, and protein. I limit their sweets without being overbearing and making them feel like they never get treats.

But me? Well, that is a whole different ballgame....

Something that always makes fresh vegetables a little more delicious is a great dip. My sister found the recipe for Red Pepper Chipotle Lime Sauce on the Skinny Taste site and made some for our beach trip last month. It was so delicious that I had to try it for myself when we got home!

Red Pepper Chipotle Lime Sauce
from Skinny Taste

Ingredients:

  • 1 Tablespoon Roasted Red Peppers (jarred)
  • 1/4 cup Light Mayonnaise
  • 1 teaspoon minced canned chipotle chilies in adobe sauce
  • 1 teaspoon fresh lime juice
Instructions:
In a blender (or Magic Bullet) puree the mayo, lime juice, roasted red peppers, and chilies. Chill until ready to serve.


Note: Following my sister's advice, I used regular mayo (that was what I had on hand) and cut it with some fat free sour cream. I don't own a Magic Bullet, so I used my blender to mince up the chilies. The mixture took a few minutes to blend all the way because the mayo really needs to be mixed it.


I served my sauce with my sister's recipe for Baked Zucchini Bites, which I am sharing over at Random Thoughts of a SUPERMOM today. If you want a recipe that will knock your socks off, try it. The sauce is also great as a dip, or as a spread over baked chicken/fish. It has a nice spicy taste without being too hot or overwhelming your taste buds.























This was a delicious meal: baked chicken with sauce, baked zucchini bites, rosemary bread, and a side salad!

  3. This sounds delicious, Amanda! Thank you for adding the info about using regular mayo and cutting it with sour cream. I'm going to find your zucchini recipe now--these sound like winners!

    Your idea for a September series is a good one. I did a "Dinner for Real" series on Tuesdays back in the spring. People seemed to like to. I let it drop when things got so crazy around here with Jack's surgery, and then I never got re-energized to start it back up as a weekly series. (Maybe I need to take vitamins so I'll be more energized!) But your idea for a mini-series sounds great, especially if you include both recipes and meal planning ideas. You're a smart cookie.

  9. This sounds great! I'm going to remember this for supper club (if we ever do it again) or for tennis parties (if I ever get to play again).

    I like how you used this sauce is so many ways: as a zucchini dip, over the chicken, and as a dip for that delicious looking bread.

    I have many yummy recipes that could work for your new series.

  11. YUM! It looks so easy too! And we do have a Magic Bullet, so I could totally make this. I bet it would be a great sauce to drizzle on fish tacos, too!
